So, yet another Sunday went by without me posting a weekly menu. I'm thinking it just isn't going to happen. :) Maybe It'll just simply be a blog about our life in CO and as a homeschooling family with a weekly recipe. This past weekend was a long holiday weekend and I never got on to blog about anything. It was a nice, restful and fun weekend for us. Kevin and I took Jason to see "Kung Fu Panda 2" on Saturday. Let me just say it was awesome! Possibly better than the first movie. Very funny. We haven't seen "Cars 2" yet, but we plan to. Monday I woke up sick and slept most of the day but Kevin took Chris, Michael and Jason to the Sky Sox game. The Sky Sox are the Rockies AAA team. No we are not Rockies fans, we're Braves fans, but having a local team like that, we take advantage. Plus it's much cheaper than MLB games. They grilled hot dogs at the game and had a good time. They all enjoyed the fireworks after the game. The Braves will be up at Coors Field the week of my birthday. Haven't decided yet if we'll spend the money or not to go.
Now we're back in the middle of a regular work week and it isn't all that fun, especially after a long holiday weekend! Kevin is busy working and Jason is busy enjoying his summer vacation. I am dealing with a very stubborn and weird stitch. That's right. I said stitch! All of my "boo-boos" have healed but, two had formed scabs. One came off and there. it. was. A tiny end of a stitch, poking out on one end of the healed incision. Now let me tell you, it freaked me out! I have since found out this is acutally NOT uncommon and that it should eventually fall off. Um, hellllloooo, "eventually"?!
And now here is what I suppose is this week's recipe.
Crab Enchiladas:
12 oz imitation crab
8 small corn tortillas
1 small onion, finely chopped
2 garlic cloves, minced
1 tsp coriander
1/4 tsp black pepper
2 T butter
3 T flour
8oz sour cream
1 can chicken broth
1 jalapeno pepper, seeded and chopped
1 cup shredded Monterey Jack cheese
heat oven to 350 degrees. Wrap tortillas in foil and heat for 10 minutes. In a medium pot, cook onion, garlic, pepper and coriander in the butter until the onion is tender. In a medium bowl, mix sour cream and flour until well mixed. Add to the onion mixture and mix well adding in the chopped pepper. Mix over medium heat until slightly thick and bubbly. Take off heat and add half the cheese. For the filling, stir 1/2 cup of the sauce into crab. Place about a 1/4 of filling on each of the tortillas andand roll up. Place in a medium baking dish seam side down and pour remaining sauce over the top. Bake uncovered for 30 minutes, take out and add the remaining cheese and bake uncovered for 5 minute.
